Preheat oven to 350 F. Butter 9 X 9 X 2 inch square baking pan
OR double the recipe for a bundt pan - I use a beautiful bundt style pan, like a sunflower.
1 Cup flour 1/4 cup unsalted butter
1 tsp. soda 1/2 cup white sugar
1 tsp. cinnamon 1/2 cup brown sugar
1/2 tsp. nutmeg 2 large eggs
1/2 tsp. salt 2 tsp. water or Rum
3 apples - peeled, cored and grated (5-6 apples when doubling)
1/2 cup chopped walnuts
1/2 Cup raisins
Mix flour, soda, spices, salt together in a small bowl. In a larger bowl, cream butter and sugars together until fluffy. Beat in eggs one at a time, Add rum. Add flour mixture and slowly mix until well blended. Fold in Grated apples, walnuts and raisins.
Bake at 350 for 30-35 mins. Cool
Rum Sauce -optional
1/4 cup unsalted butter
1 1/2 cups brown sugar, packed
1/2 cup heavy cream
1/4 cup dark rum
In a small sauce pan, melt butter, whisk in sugar and cream. Cook on low heat until sugar dissolves @6 mins. Set aside and cool. Stir in Rum.
Whipped Cream - optional
1 Cup heavy cream
1 tsp. vanilla
2 tsp. maple syrup or honey
Beat cream to soft peaks. Add vanilla and maple syrup and beat for a few more seconds.
Cut cake into squares. Spoon rum sauce over each and top with whipped cream! Bon Appetit !!
OR keep it simple and just serve the cake with ice cream!
