This recipe is quick and easy, shared by my friend Lovie.
1 Chicken -cut up or 4-6 chicken breasts cut in half (or half breasts and thighs)
Place Chicken in a glass baking pan or a large zip lock bag..
Sauce: Combine the following ingredients. Pour over chicken.
Marinate several hours or over night.
4 cloves garlic
2 Tbsp. oregano
1/2 cup red wine vinegar
1/2 cup olive oil
1 cup pitted prunes, chopped
1/2 cup kalamata olives and / or green olives
1/2 cup capers
6 bay leaves
salt and pepper
Bake 1 hour at 350 F. Serve with brown rice or bulgar wheat pilaf.
