In a large bowl combine the following ingredients  Put into a ‘9’ inch square  pan. 

5 large apples, peeled and sliced

1/3 cup sugar

3 Tbsp. brown sugar

1 tsp. fresh ginger, grated or finely chopped

6 Tbsp. lime juice and some zest

 

In the same bowl, combine the following.  Mix well.  Sprinkle over apples.

2/3 cup sugar

3/4 cup flour OR 1/4 cup flour + 1/2 cup oats

1 tsp. cinnamon

1/4 tsp. pepper

3 Tbsp. melted butter

1/2 cup coconut

 

Bake at 375 F. for 40 -55 mins.  Serve with ginger, coconut or vanilla ice cream.

Thai Apple Pie

This combines some of my favorite flavors of lime, ginger and coconut. 

It is really more like a crisp than a pie.
