1/2 head red cabbage

1/2 head green cabbage

1 cup pine nuts- toasted lightly

1 red onion

1 red pepper

1 yellow pepper

1 cup feta cheese, crumbled

 

Dressing:

1/4 cup rice vinegar or white vinegar

2 Tbsp. balsamic vinegar

1/4 cup olive oil

2 Tbsp. lemon juice

 

Chop all veggies and mix all ingredients together.

Add dressing.  Mix well.  Dressing can be added several hours in advance or the night before.  

 

*Variation: Add chopped pears, apples and fuyu persimmons and walnuts instead of  peppers and pine nuts to the above.
