I love this warm or toasted with butter, especially at teatime.
1 Cup vegetable oil
2 Cups sugar
3 eggs, beaten
3 Cups whole wheat flour**
1 tsp. salt
1 tsp. baking soda
2 Cups peeled, chopped or grated apples (about 4 apples)
1 Cup nuts-walnuts or pecans
2 tsp. vanilla extract
Preheat oven to 350F. Grease and flour 2 loaf pans.
In a large bowl, combine oil, sugar and eggs. In a medium bowl, sift together flour, salt & soda.
Gradually add dry ingredients to the wet, mixing well after each addition. Fold in apples, nuts and vanilla.
Pour into 2 loaf pans. Bake at 350F for @1-1/2 hours. Turn out of pans while still warm (after 20-30 mins) and let cool.
**Option-use 1-1/2 cups whole wheat flour plus 1-1/2 cups unbleached white flour
